Sunshine Breakfast Bowl

If you follow a plant-based diet, consuming enough protein can be a challenge. How about starting your day off with this breakfast bowl to add a punch of protein to your morning routine? This recipe is from Chef Emily Gaud-Velazquez and Jenny Marshall, MS, RD, CNSC, LDN, clinical nutrition manager.

Ingredients:

  • 6 ounces plain, fat-free Greek yogurt

  • ¼ cup fresh blueberries 

  • 2 tbsp. fresh banana, sliced 

  • 2 tbsp. quinoa granola 

  • 1 fresh mint sprig

Preparation:

  • Place yogurt in bowl.

  • Add blueberries and banana.

  • Garnish with quinoa granola and mint.

Serve cold and enjoy!
